Émile Baudement was a French agricultural scientist and professor of zootechnics at the Conservatoire des arts et métiers. He was commissioned by the French government to document the world's finest cattle breeds following the 1856 Paris exhibition, resulting in this scientifically and artistically significant zootechnical atlas.
