This heliogravure depicts the Mariahof cow, a muscular alpine breed native to Austria. Standing prominently in a mountainous landscape, the animal exemplifies the physical traits valued in regional cattle breeding during the 19th century.

Emile Baudement (1821–1862) was a French zootechnician and agricultural writer who played a key role in the 19th-century classification of livestock breeds. His major work, Les races bovines, compiled systematic studies of cattle presented at the 1856 Universal Agricultural Competition in Paris. Baudement’s contributions combined empirical observation with state-supported research and helped lay the groundwork for modern animal husbandry in France.
